Zucchini, walnut and ricotta cheese salad

  • Ingredients

    250g zucchini, thinly sliced

    300 g endive, spinach and lamb's lettuce

    150 g of ricotta cheese

    1 handful of walnuts chopped

    The juice of a lemon

    3 tablespoons of virgin olive oil

    Striped ginger

    Salt and pepper

Zucchini, walnut and ricotta cheese salad

Preparation

1.Firstly, we wash the endive, spinach and lamb's lettuce and drain it well. We cut the leaves but leave some a little larger to decorate.

2.We wash the zucchini and make very thin slices thanks to the mandolin-type cutter.

3.Add the escarole, spinach and lamb's lettuce in a bowl, then place the zucchini slices.

4.In a mortar we crush the walnuts until obtaining pieces. We add them to the salad and the crumbled ricotta cheese.

5.In a glass jar, mix the lemon juice, the tablespoons of virgin olive oil, a little salt, pepper and grated ginger. We shake and pour it over the salad.

6.Stir the ingredients and serve.
