Cheese and walnut risotto
Ingredients (for two people):
35 gr. of butter
2 tablespoons oil
1/2 onion
1 glass of rice
2 1/2 glasses of chicken broth (or water)
50 gr. grana padano cheese powder or very fine grated
70 gr. blue cheese
100 ml. cream for cooking
100 gr. peeled and chopped walnuts
Salt
White pepper
Cheese and walnut risotto
Elaboration:
1.In a frying pan, we put the oil and butter and melt over heat.
Add the chopped onion and sauté until it begins to become transparent.
2.Add the rice, raise the heat and sauté for a couple of minutes until it begins to become transparent, to release the starch.
3.Meanwhile, we heat the chicken broth, add it to the pan in which we have the rice. Salt and pepper and let the rice cook for about 20 minutes, until we see that it is done.
4.While the rice is being made, we are going to prepare the cheese and walnuts
Sauté the walnuts in a pan for a couple of minutes, to toast them a little and reserve.
5.When the rice is done, add the cheeses and cream and mix with enveloping movements.
Finally, add the walnuts and mix.
We let pose 5 minutes and ... ready to eat!
