
Fritters with cream and nuts
Dough ingredients
1 egg
125ml milk
20ml oil
160gr of flour
8gr of yeast
50gr of sugar
1 pinch of salt
Ingredients pastry cream
200ml milk
1 branch of Cinnamon
Lemon peel
2 egg yolks
50gr sugar
1 tablespoon of cornstarch
50gr of walnuts
Preparation of pastry cream
1.Reserve 75ml of milk to mix the tablespoon of cornstarch in cold. Heat the rest of the milk with a cinnamon stick and a lemon zest.
2.While the milk is heating, take the egg yolks and sugar and beat.
3.When the milk has warmed up and absorbed the aroma of cinnamon and lemon, remove the cinnamon and lemon peel. We add the milk that we had reserved with the cornstarch, little by little, that is when we add the chopped walnuts.
4.Finally we put everything on a low heat (otherwise it will cut), mixing for about 4 minutes until we see that it thickens. Let cool and store in the fridge.

1.Mix all the ingredients.
2.Put a deep frying pan, with enough sunflower oil, and with the help of 2 tablespoons, take a little dough, make the balls and leave them in the boiling oil, being careful not to burn.
3.Take out of the pan, put on paper to absorb excess oil.
- Coat the fritters with the sugar and cinnamon that we have previously mixed.
5.Once the cream is made, we will make a cut at the base of the cold fritters and with a pastry bag we will introduce the cream.
